How to read this table

Smoke point separates frying oils from finishing oils. High-smoke-point oils (refined, roughly above 200°C) tolerate deep-frying and searing without breaking down; low-smoke-point oils (many unrefined and virgin oils) are for dressings, drizzling and low-to-moderate heat, where their flavour is an asset and high heat would damage them. The single biggest factor is refinement: the same oil, refined, can have a dramatically higher smoke point than its unrefined form, because refining strips out the free fatty acids and impurities that smoke first. Why the figures vary

Every smoke point here is a range, not a fixed number, and sources disagree — for good reasons. Smoke point falls as an oil ages or is reused (free fatty acids build up), it depends on how refined a given bottle is, and it shifts with variety and processing. Published charts differ because they test different samples. Treat these figures as indicative guidance for choosing an oil to a task, not as exact specifications; if an exact value matters, test your actual oil. What is reliable is the pattern — refined high, unrefined low, flaxseed lowest of the common oils.

Smoke point and oil choice

Match the oil to the heat. For deep-frying and high-heat, choose a refined, high-smoke-point, neutral oil. For everyday cooking, most refined oils are fine. For finishing, dressings and low heat, an unrefined or virgin oil brings flavour that a refined oil lacks — accepting its lower smoke point. Smoke point, flash point and fire point

Three temperatures are easy to confuse. The smoke point is where an oil begins to smoke visibly and its components start breaking down — the practical cooking limit. The flash point is the much higher temperature at which the vapours can momentarily ignite with a flame, and the fire point is higher still, where it sustains burning. For cooking, only the smoke point matters, and you should never approach the flash point in a kitchen — an oil left heating unattended can reach it and catch fire. When a chart lists a single “smoke point”, that is the number relevant to cooking; the ignition temperatures are a fire-safety consideration, not a cooking one, which is another reason to heat oil deliberately and never leave it unattended.

Reused and ageing oil smokes sooner

A fresh oil’s smoke point is not the one you keep. Every time oil is heated and reused — as in a fryer — its free fatty acids rise and impurities accumulate, and its smoke point falls. Frying deposits also lower it. So an oil that started high can, after repeated use, smoke at a noticeably lower temperature and impart off-flavours. This is why commercial fryers monitor oil quality and change it on schedule, and why a home cook notices old frying oil smoking earlier than fresh. The refined-versus-unrefined gap, oil by oil

The gap between refined and unrefined is large enough to change how an oil is used. Coconut oil is a clear example: refined it sits around 230°C and fries well, while virgin coconut oil is far lower (~175°C) and better for gentle cooking and baking. Sesame follows the same pattern — refined ~215°C, but toasted/unrefined sesame oil much lower and used as a flavouring, not a frying oil. Olive oil spans virgin grades (lower) to refined (higher). And flaxseed, essentially only sold unrefined, has such a low smoke point (~107°C) that it is a finishing oil only and should not be heated hard at all.
