The milling route

A palm oil mill runs fresh fruit bunches through sterilization (steam, which deactivates enzymes that would raise free fatty acids and loosens fruit), threshing (separating fruit from bunch stalks), digestion (mashing the fruit to release oil from the mesocarp), pressing (screw press to extract crude palm oil), and clarification (settling and centrifuging to purify the oil). The nuts are then cracked and the kernels recovered for separate palm kernel oil extraction. Because of the sterilization and clarification stages, palm processing is a dedicated mill operation rather than a simple press line.

Refining, uses and the two products

Crude palm oil is usually refined — commonly by physical refining given its higher free fatty acid content — and often fractionated into liquid olein and solid stearin for different food and industrial uses. Palm oil's stability and semi-solid nature make it ubiquitous in processed foods, frying and non-food products; palm kernel oil, richer in lauric acid, serves confectionery and oleochemical markets.
