Two method systems dominate edible-oil testing. The AOCS Official Methods and Recommended Practices, published by the American Oil Chemists’ Society, are the long-standing reference used worldwide for fats and oils. The ISO standards provide internationally agreed equivalents for many of the same determinations. For most key parameters there is both an AOCS method and an ISO method, and specifications state which one applies. The common quality parameters
A handful of parameters describe most of what matters about an oil’s quality and freshness. Acid value / FFA measures free fatty acids and degradation (see acid value & FFA). Peroxide value measures primary oxidation products — an early sign of rancidity. Moisture and volatile matter affects stability and can cause the oil to foam or spit. Iodine value indicates the degree of unsaturation, which relates to how the oil behaves and its identity. Colour and insoluble impurities round out common specifications. How methods are used in practice
Standardised methods exist so that a result means the same thing everywhere. Choosing the right method matters — a specification that says “acid value by ISO 660” is unambiguous, while a bare number is not. Why standardised methods matter
It is worth being explicit about why the method, not just the number, is specified. Two labs measuring “peroxide value” can get different results if they use different procedures, sample preparation or end-points — so a bare figure is ambiguous. Naming the method (for example, “peroxide value by ISO 3960”) makes a result reproducible and enforceable: any competent lab can repeat it and get a comparable answer, and a buyer can hold a supplier to it. This is the whole point of the AOCS and ISO systems — they turn quality from an opinion into a measurement everyone agrees on. When writing or reading a specification, always pair each parameter with its method and revision.
