From fruit to crude oil
Crude palm oil (CPO) is the oil milled from the mesocarp (flesh) of the oil-palm fruit — sterilized, digested, pressed and clarified. Its striking reddish-orange color comes from a high content of carotenoids (provitamin A), and it is also rich in vitamin E (tocopherols and tocotrienols). But as a raw oil it carries free fatty acids, odor and impurities, and its FFA tends to be relatively high because the fruit's own enzymes act quickly after harvest — which is why prompt sterilization and processing matter. CPO is the form in which palm oil is largely traded as a commodity feedstock.
What RBD refining changes
RBD stands for refined, bleached, deodorized — the three things done to turn CPO into mainstream food oil. Refining removes the free fatty acids; bleaching with adsorbent earth removes pigments — including most of the carotenoids, which is why RBD palm oil is pale rather than red — along with trace metals and oxidation products; and deodorization strips the odor and remaining volatile FFA by steam. The result is a bland, light, stable oil suited to cooking, food manufacturing and further fractionation. Why palm is usually physically refined

Red palm oil: keeping the carotenoids
Between raw CPO and fully bleached RBD lies a deliberate middle path: red palm oil, refined gently to remove free fatty acids and odor while retaining much of the carotenoid and vitamin-E content (and the red color). This is done with milder or modified processing that skips or limits the bleaching step responsible for stripping pigment.
